Hidden Recipes

In 1944, Elena “Ica” Kalina, her sister and parents were rounded up from their home in Hungary and sent to the Auschwitz concentration camp. Her parents were sent to the gas chambers immediately. The sisters were sent for forced labor at a munitions factory in a sub-camp of the Buchenwald concentration camp in Germany. At night in their barracks, Kalina and the other women prisoners would talk about their favorite recipes, and Kalina recorded them with a small pencil and slips of paper from trash baskets that she’d been able to steal.


Kalina survived, and so did the 600 recipes. She moved to Czechoslovakia, married, and immigrated with her husband to Minnesota, where she kept the scraps of paper in a tin box in a closet. Now, in honor of International Holocaust Remembrance Day, Kalina’s daughter Eva Moreimi has published Hidden Recipes, a book about her mother’s life, including the recipes.
